Dairy Alternatives – Soy, Almond, Coconut, Hazelnut, Cashew

Non-Diary Milk Alternatives

Facts:

30-50 million people living in America are Lactose Intolerant… that’s the entire population of Canada and then some.

15-35% of customers order non dairy drinks.

SOY:

Soy is the most popular dairy alternative but is generally considered to not be the tastiest. Soy milk does best like regular milk. Steam to 140 and let it rise to 160. Since soy contains around the same fat % as regular milk (2.9%) it reacts similarly to regular dairy.

ALMOND:

Almost milk is the second most popular dairy alternative, richer then soy, nice flavour. Almond also steams up similarly to milk. High fat content helps to maintain micro-foam. Don’t steam past 140 or you loose its inherent nuttiness. Almond is also suitable for vegans and vegetarians.

CASHEW:

Made up of cashews, this milk has a nice flavour and acts well when steamed. Cashew milk can be pushed to 140-160 because it acts similar to low-fat dairy milk.

HEMP:

Made from hemp seeds soaked and ground with water. Hemp milk contains no THC (or very small trace amounts) which is the psychoactive substance found in marijuana. Hemp acts very similar to Soy milk and has a rich nutty flavour. Again, steam to 140 and let it rise to 160.

COCONUT:

Coconut milk is very watery, which makes it hard to texture but gaining popularity. No latte art here. Steam until 160 or as customer / personal preference.
